I’ve missed cooking these beautiful, healthy meals. Now that I’m home for the summer, I get to do it a looooot more, so stay tuned 😉

Anyways, I love cooking food inspired by other cultures. I can’t really afford to travel now (college struggles, am I right?), but this gives me a taste of what other countries are like. This dish is a vegan shawarma inspired meal. It’s air fried tofu, mushrooms, onion, cucumber, and arugula on flatbread, topped with my homemade shawarma sauce. Here’s the sauce recipe:
1/2 c vegan yogurt
1 handful of parsley, chopped
1-2 cloves grated garlic
Splash of lemon juice
Salt to taste
Mix in a bowl and serve over the flatbread.

Every time I see a bagel I think of Captain Holt screaming “WUNTCH IS DEAD. BAGEL!” and tbh that makes me really happy😌

These bagels are super easy to make. All you need is 1/3 cup plain yogurt, 1/4 c all purpose flour (may need more), and 1/2 tsp baking powder. Mix together, form into a bagel, and bake at 375°F for about 20 minutes. I topped mine with vegan chive cream cheese and vegan smoked salmon. Enjoy!
